Zucchini Wrapped Chicken Enchiladas

This Chicken Enchilada recipe is so good. I promise that you will be amazed at how easily the zucchini slices can swapped for tortillas without losing any of the flavour or overall concept of the dish.

Yellow Enchiladas are one of my popular decadent Mexican dishes. Change tortillas wrapped around wuss soaked in a luscious spicy sauce and lidded with liquified mallow, are you drooling yet?

Zucchini Wrapped Chicken Enchiladas
